Southwest Chicken Vegetable Soup

Ok – since many of my Twitter friends asked for my soup recipe, I’ll just post it here:

 

  • A bunch of chicken cut up (the amt is up to you – leftovers are ok – I used a large package of raw boneless breasts)
  • A large carton of chicken broth (or you can use 3-4 cans chicken broth)
  • Two packages (envelopes) taco seasoning
  • One bag Frozen soup veggies (Kroger makes these “meal starter” bags.  I used that.
  • About a cup of rice (I just grab a handful and throw it in)
  • a can of diced tomatoes
  • About 3-4 cups of water (depends on how watery you like your soup)
  • 3 stalks of celery cut up small
  • Season to taste.  I added some basil, thyme, sea salt, pepper and onion powder

Toss all the ingredients into a crock pot and let cook for a long time.  :)  I let mine cook on low for about 10-12 hours.  You’ll want to stir it ever so often.

**  Sometimes I modify this – I might add extra cans of veggies, or a couple more diced potatoes, or some okra.

** This is especially good with fresh hot corn bread.
